Ingredients
- 4 heads baby bok choy
- 4 tablespoons light sesame oil
- 2 scallions, white part only, thinly sliced
- 2 tablespoons fresh ginger, minced
- 2 cloves garlic, minced
- 1/2 pound shiitake mushrooms, sliced, 1/4 inch thick remove the stems
- pinch of sea salt
- 2 tablespoons water
- 1 tablespoon tamari
- 1 tablespoon freshly squeezed lime juice
- 1 tablespoon sesame seeds

Instructions
- Trim the base off the bok choy and discard. Trim the leaves from the stems and cut both crosswise into bite-sized pieces. Keep the stems separate from the leaves.
- Heat 2 tablespoons of the sesame oil in a saute pan over medium heat. Add the scallions, ginger, garlic, shiitake mushrooms and a pinch of salt. Saute for 30 seconds.
- Add the water, tamari and the bok choy stems and saute for 2 minutes.
- Add the bok choy leaves, lime juice, 2 tablespoons sesame oil and a pinch of salt. Saute until the bok choy is just wlited, about 2 minutes. Taste and add more lime juice if necessary. Sprinkle with sesame seeds and serve immediately.
