1/2poundshiitake mushrooms, sliced, 1/4 inch thickremove the stems
pinch of sea salt
2tablespoons water
1tablespoontamari
1tablespoonfreshly squeezed lime juice
1tablespoonsesame seeds
Instructions
Trim the base off the bok choy and discard. Trim the leaves from the stems and cut both crosswise into bite-sized pieces. Keep the stems separate from the leaves.
Heat 2 tablespoons of the sesame oil in a saute pan over medium heat. Add the scallions, ginger, garlic, shiitake mushrooms and a pinch of salt. Saute for 30 seconds.
Add the water, tamari and the bok choy stems and saute for 2 minutes.
Add the bok choy leaves, lime juice, 2 tablespoons sesame oil and a pinch of salt. Saute until the bok choy is just wlited, about 2 minutes. Taste and add more lime juice if necessary. Sprinkle with sesame seeds and serve immediately.
