Ingredients
- 1 bunch of lacinato kale shredded with the stems removed
- 1/3 head of red cabbage shredded
- 1-2 carrots shredded
- 1 beet shredded
- 1/2 red onion sliced
- 2 cloves garlic minced
- 1/2 cup raw pumpkin seeds
- 3 tablespoons olive oil
- 1 tablespoon organic apple cider vinegar
- juice from one lemon
- 1/2 cup nutritional yeast
- 1 teaspoon salt
- cayenne or black pepper to taste

Instructions
- Mix together the kale, cabbage, onion, garlic, shredded beet and carrots.
- In a separate small bowl mix together the olive oil, lemon and apple cider vinegar. Drizzle over the vegetables.
- Add the pumpkin seeds, and nutritional yeast, salt and pepper. Mix everything together and serve.
