Kale and Red Cabbage Salad

Ingredients
1 bunch of lacinato kale shredded with the stems removed

head of red cabbage shredded
1-2
carrots shredded

beet shredded
1/2
red onion sliced

cloves garlic minced
1/2 cup raw pumpkin seeds

olive oil

tablespoon
organic apple cider vinegar
juice from one lemon

cup nutritional yeast

teaspoon
salt
cayenne or black pepper to taste
Instructions
Mix together the kale, cabbage, onion, garlic, shredded beet and carrots.
In a separate small bowl mix together the olive oil, lemon and apple cider vinegar. Drizzle over the vegetables.
Add the pumpkin seeds, and nutritional yeast, salt and pepper. Mix everything together and serve.
