Mexican Chicken

Ingredients
  • 1 chicken (3.5 -4.5 lbs) cut into pieces
  • 2-3 tablespoons olive oil
  • 1 onion, chopped
  • 3-4 cloves garlic chopped
  • 1 cup white wine
  • 1 jar salsa (can substitute fresh tomatoes)
  • 1 tablespoon taco spice
  • half cup chopped fresh tomatoes

Instructions
  1. In a large pot over medium heat the olive oil. Add the onion and sauté until brown. Add chopped garlic and sauté for an additional 2 minutes until golden.
  2. Pour in the white wine and allow it to deglaze the pot. Add the chicken pieces to the pot and allow the wine to reduce by half.
  3. Add the jar of salsa and taco spice to the pot. Add the chopped fresh tomatoes. Bring to a boil and then immediately turn down the heat to a simmer and cover. Cook on low for 45 minutes to 1 hour.
  4. Serve with rice or quinoa, pinto beans and sliced avocado. Sprinkle fresh cilantro on top of the chicken.
