Ingredients
- 1 chicken (3.5 -4.5 lbs) cut into pieces
- 2-3 tablespoons olive oil
- 1 onion, chopped
- 3-4 cloves garlic chopped
- 1 cup white wine
- 1 jar salsa (can substitute fresh tomatoes)
- 1 tablespoon taco spice
- half cup chopped fresh tomatoes

Instructions
- In a large pot over medium heat the olive oil. Add the onion and sauté until brown. Add chopped garlic and sauté for an additional 2 minutes until golden.
- Pour in the white wine and allow it to deglaze the pot. Add the chicken pieces to the pot and allow the wine to reduce by half.
- Add the jar of salsa and taco spice to the pot. Add the chopped fresh tomatoes. Bring to a boil and then immediately turn down the heat to a simmer and cover. Cook on low for 45 minutes to 1 hour.
- Serve with rice or quinoa, pinto beans and sliced avocado. Sprinkle fresh cilantro on top of the chicken.
