Kale Parsley Cucumber Pear Smoothie

Ingredients
  • ¼ to ½ bunch parsley leaves with stems
  • 4 or more lacinato kale leaves with the stalks removed
  • ½ cucumber peeled
  • 1 pear (can substitute an apple)
  • 1 cup of water or coconut water to taste and desired consistency. Or 1/2 cup of orange juice mixed with 1/2 cup of water to avoid adding too much sugar.
  • 1 inch piece of peeled ginger root to spice it up (optional)
  • 2 tablespoons chia seeds (optional)

Recipe Notes

Blend all the ingredients except for the chia seeds in a blender. Remove the mixture from the blender and add the chia seeds. You may choose to refrigerate it to make it cooler or have it immediately.

When making a smoothie, you may want to add 1 tablespoon of coconut oil for the nutrient and blood sugar stabilizing benefits. You can always substitute spinach, collard greens, chard or any other leafy green for kale.    When you add  organic chia seeds and/or freshly ground flax seeds, you benefit from the additional omega 3 fatty acids and fiber.
