Wash and prepare the romaine lettuce and place in a salad bowl.
Make the dressing. In a small bowl stir together the lemon juice, dijon mustard, garlic and anchovy. Add the garbanzo beans if you are including them. Whisk in the olive oil and season well with salt and pepper to taste.
Pour the dressing with the beans into the bowl with the romaine lettuce and gently coat the leaves.
