Ingredients
  • 3 cucumbers diced and peeled
  • 3-4 tomatoes, diced (roma tomatoes are typically used for this recipe)
  • 1 red bell pepper sliced
  • 3 green onions sliced
  • 1cup fresh parsley chopped
  • 3tablespoons fresh mint chopped
  • 2-3 garlic cloves chopped
  • 1/2 cup olive oil
  • 2tablespoons fresh lemon juice
  • 1teaspoon salt
  • 1teaspoon freshly ground pepper
Instructions
  1. Toss the cucumbers, tomatoes, bell pepper, green onions, parsley, mint and garlic together in a bowl. Drizzle the olive oil and lemon juice over the salad to coat.
  2. Season with salt and pepper and serve.
