Chia Seed Pudding
Ingredients
  • 2cups low-fat coconut milk or almond milk
  • 1/2cup organic chia seeds
  • 1/4cup or less organic maple syrup
  • 1/2teaspoon real vanilla extract
  • 1/2teaspoon cinnamon powder
  • 1/2cup organic blueberries
Instructions
  1. Combine the coconut milk, maple syrup and cinnamon powder. Then mix in the chia seeds.
  2. Pour the mixture into a glass container and let it gel overnight. (You may choose to pour it into individual containers, so you can grab one and have it on the go).
  3. In the morning top with blueberries and enjoy.
